Equal parts Godello and Treixadura, both autochtonous Galician varieties, fermented using native yeasts. Vines are planted on clay, sandy and decomposed granite soils of tectonic origin which are well-drained and have low ph levels ideal for white wines. Cold maceration of whole, destemmed and uncrushed grapes for 6-8 hours at a temperature of 8°C with carbonic snow, pneumatic pressing and then left to settle on lees in a process known as “trabajo de lías”. This process allows the natural fine lees to settle by gravity and to be separated from the thicker lees. This is then followed by fermentation and ageing on fine lees for a few months. There is no oak ageing, just a pure example of artisanally made Godello and Treixadura.
Bright yellow colour with lemon, green glints, brilliant bright transparency. Aromatic intensity of white fruits - green apple, white pear, melon, peach, mango, guava, pineapple with lime zest notes and ripe quince, bayleaf and white flowers, jasmine, lavender and mineral undertones. Unctuous fresh palate, great structure with lifting acidity, silky and fleshy mid palate with a rich glyceric texture, orchard fruits, stony fruits, pears, and lemon flavours, with a touch of aniseed, pure on the finish, with citrus fruits, mineral and floral notes repeating. Total production in 2017: 20,000 bottles.
