Plurivarietal hand-picked, selected 30% Mencia, 30% Garnacha, 20% Tempranillo, 20% Merenzao from calcareous slate, granite, schist soils. Alcoholic fermentation takes place in French Radoux foudres with some of the stems, followed by malolactic fermentation in 80% French and 20% American 400 litre oak barrels with battonage over lees for seven months. A natural filtration occurs through decanting without any clarification or the use of chemical or mechanical elements. An intensely mineral wine with graphite anchoring delicate flavours of violets, black cherries and cassis. Very limited production: 5500 bottles. 14% Alc abv
