Selection of the estate’s finest 100% Verdejo aged on lees from 80%-23 year old trellised vines with yields of 2.98 tons per acre - and 20%-83 year old gobelet vines with yields of less than 1 ton per acre. Fermentation for 20 days in small stainless steel tanks at 15°C, matured on natural yeast lees.
Straw-coloured with a steely reflection, clean and bright. Striking bouquet of citrus and anise with stone fruit, green apple, grapefruit and mineral notes. Tasty and fresh acidity, rounded, zesty mouthfeel with citrus, pear flavours, fleshy, ripe white fruit and fennel notes with a characteristic Verdejo bitterness which creates an immense aftertaste. A refined and full-bodied wine. The cellar’s crowning glory. Smooth, elegant with a very long finish. Available in 37.5cl, 75cl and Magnums.
