The jewel of the cellar. From “pie franco” ungrafted, pre-phylloxera Verdejo vineyards aged over 100 years, located at an altitude of 850m above sea level grown in extremely poor soils under a harsh continental climate and influence of the Sierra Segovia which produces a large thermal oscillation day/night, optimal conditions for the production of exceptional and very high quality grapes.Production from these venerable vines is extremely low, only 2 or 3 bunches per plant. Harvested by hand, fermented at low temperatures in stainless steel tanks to maintain all of its fruit and mineral intensity, aged 3 months on its lees.
Luminous yellow colour with lemon highlights. Fresh and appealing, contained aromatic intensity but of great complexity, characterised by the minerality of the soil, notes of slate, accompanied by white fruit, fresh, very well integrated with balsamic and herb notes typical of the Verdejo variety. Great structure with fresh acidity and volume, grapefruit, lime, mango and white stone fruits and distinctive notes of fennel and dried flowers, elegant with great breadth and persistence. A whim that will surprise when you try it. Limited production: 25.000 bottles. Available in 75cl and Magnums.
