100% Organic Verdejo, single estate, sourced from coolest high altitude -700-800m- vines, carefully selected and harvested by night mid-September, from nutrient poor, limestone rich soils. The Verdejo is fermented using wild native yeasts in select French Allier 300lt fine grain, lightly-toasted barrels for two months and then aged for a further 6 months in small stainless steel tanks in constant contact withthe fine lees with regular batonnage prior to being racked, softly filtered and bottled. Bright golden yellow, intense complex nose of ripe exotic fruit, minerals and a touch of wood. Unctuous and elegant on the palate with great natural acidity, balance and a persistent finish. Great value for money, perfect with richly flavoured fish, seafood dishes, white meats and rice dishes.
